*Ketchup* It's not just Heinz Anymore


Ketchup have been made since the 17th century under the names of "koechiap", "catchup", and "catsup".  The term "ketchup" entered the English dictionary about 1710.  The most famous ketchup is the commercially produced tomato variety in the plastic, squeezy bottle you find in kitchens around the world.   Humble as it is, tomato ketchup brings life to tired foods.  Who would even consider having a burger and fries without a good dollop of ketchup on the side?  So, imagine what a stir you can cause if you make your own...

EUROPE
*Rhubarb Ketchup*




INGREDIENTS
2 lbs fresh rhubarb
1/2 orange juice
2 large onions, chopped
4 1/2 cups white vinegar
4 cups light brown sugar
1 tsp kosher salt
1 tsp allspice
1 tsp brown mustard seeds
1 tsp black peppercorns

1.  Cut rhubarb stalks into 1" pieces.  Place in large saucepan with orange juice, onions, vinegar, sugar, salt & spices
2.  Heat slowly, stirring until sugar dissolves.  Cover and simmer over low-heat for 1 1/2 hours, stirring occasionally.
3.  Strain mixture through a fine nonmetallic strainer, then pour into hot, sterilized jars.  Seal & Store.  "makes 1 1/2 quarts"

*English Orchard Apple Ketchup*

INGREDIENTS
4 lb apples, cored & chopped
1 large onion, chopped
2 1/2 cups white vinegar
1 tbs kosher salt
1 tsp whole cloves
1 cinnamon stick
1 cup sugar

1.  Place apples, onion, salt, cloves, cinnamon and vinegar in a large pan.  Bring to a boil, then cover and simmer for 1 1/2 hours, stirring occasionally.
2.  Strain through nonmetallic strainer, then return to pan over low-heat.  Stir in sugar until dissolves.  Bring to boil and boil rapidly for 5 minutes, then pour into hot, sterilized jars.  Seal and store.  "makes 5 cups"


NORTH AMERICA
*Classic American Tomato Ketchup*


*Sweet Cherry Ketchup*
(great with burgers, fried & onion rings)



INGREDIENTS
1 onion, chopped
2 large apples, cored, peeled & chopped
2 lbs morello cherries, pitted
2 cups red-wine vinegar
2 cups brown sugar
1/2 inch piece fresh ginger root
1/2 tsp cinnamon
1/2 tsp kosher salt

1.  Place all ingredients in a large pan & bring to a boil, stirring until sugar dissolves. Cover and simmer for 1 hour.
2.  Strain through nonmetallic strainer, then pour into hot, sterilized jars.  Seal & store.



*Cranberry Ketchup*

 INGREDIENTS
2 lbs fresh cranberries
2 1/2 cups golden raisins
2 cups red-wine vinegar
2 cups brown sugar
2 tsp ground allspice
1 tsp kosher salt
1 tsp cinnamon

1.  Place all ingredients in large saucepan and bring to a boil, stirring until sugar dissolves.  Cover & simmer 1 hour
2.  Strain through nonmetallic strainer and pour into hot, sterilized jars.  Seal and store.

CARIBBEAN
*Lemon & Lime Ketchup*

INGREDIENTS
4 lemons
4 limes
6 tbs kosher salt
1 onion, finely chopped
2 garlic cloves, minced
3 1/2 cups white-wine vinegar
1 tsp, whole cloves, lightly crushed
1 tbs ground ginger
1 tsp fresh cracked pepper

1.  Peel lemons & limes and slice thick.  Rub salt into flesh and layer in hot, sterilized jars with onion & garlic.
2.  Put vinegar, cloves, ginger and pepper in a saucepan and bring to a boil.  Pour over lemons & limes & seal. Store for 6 months.
3.  Strain ketchup into sterilized jars, seal and store.


AFRICA
*Green Pepper Ketchup*

INGREDIENTS
8 green bell peppers, seeded & diced
8 fresh jalapenos, seeded & halved
1 onion, chopped
2 garlic cloves
1 slices fresh ginger root
4 1/2 cups malt vinegar
2 cups brown sugar
1 tsp black peppercorns
1 tsp kosher salt

1.  Place peppers, jalapenos, onion, garlic, ginger, vinegar, and sugar in large saucepan.
2.  Bring to boil, stirring until sugar dissolves.  Cover and simmer for 1 1/2 hours, stirring occasionally.
3.  Strain through fine nonmetallic strainer, then pour into hot, sterilized jars.  Seal & store.
