Cooking With Lamb

*Rosemary Braised Lamb Shanks*

INGREDIENTS
6 lamb shanks
2 tbs olive oil
2 onions, chopped
3 carrots, cut into 1/4" rounds
10 garlic cloves, minced
1 (28oz) can whole peeled tomatoes, w/juice
1 can chicken broth
1 can beef broth
5 tsp fresh rosemary, chopped
1 tsp fresh thyme, chopped
1 750 mil bottle red wine
KOSHER SALT & CRACKED BLACK PEPPER, TO TASTE
 
Salt & pepper shanks.  Brown shanks in olive oil on all sides, about 8 minutes. Transfer to plate.


Add onions, carrots and garlic to pot and saute until brown  Add wine, tomatoes, chicken & beef broth. Stir, add rosemary & thyme.  Return shanks to pot and submerge in liquid.  Bring to boil, then reduce to med-low heat and cover.

Simmer two hours or until meat is tender.

Remove shanks and boil juices until thickened, about 20 minutes.  Serve shanks with mashed potatoes and reduced aux jus.

         
*Lamb Korma*

INGREDIENTS
1 1/2 cups onion, chopped
1 cup Clarified butter(melted and milk solids skimmed off)
4 large cardamom pods(found in spice section)
2 lb lamb, cubed
6 garlic cloves, crushed
1/2 inch fresh ginger, grated
1 1/2 tsp ground coriander
3 tsp curry powder
1 1/2 tsp kosher salt
8 oz plain yogurt

   Brown onions in butter, remove w/slotted spoon and pulse in a blender to form a paste.  Crush cardamom and mix into paste.
   Add meat to pan and stir over medium heat.  Afet a few minutes add garlic, ginger, coriander, curry powder & salt.  Stir for a couple minutes...mix in yogurt.  cover and simmer over low heat for 1 1/2 hours.  Five minutes before serving add onion-cardamom paste mixing well.
   Serve w/Rice.

*15 Minute Rosemary Lamb Chops*

INGREDIENTS
12 Lamb Chops
6 tbs Lemon juice
3 tbs Fresh Rosemary, chopped
3 Garlic Cloves, minced
1/4 tsp kosher salt
1/4 tsp fresh cracked pepper

   Mix together lemon juice, rosemary, garlic, salt & pepper.  Rub chops with mixture and set aside.
   Preheat broiler on high and place cast iron skillet, large enough to hold chops, under heat for about 10 minutes to get very hot.
   Place chops in pane and return to broiler for 4-5 minutes.  Lamb will cook on both sides at same time.  This is a quick broil method.
